I honestly can't remember when I started baking - I remember that it was sometime in high school but my hobby just grew with age the more I started to bake for other people. This recipe is my absolute favorite! All bakers have their "best" recipe and I must say, I am always proud of my banana breads. It's not too sweet, not too dense, not too fluffy...just the right amount of bananas and chocolate which makes it so delicious. I actually have family and friends who are not fond of bananas - and they said that they can eat my banana breads! Not only do I like the taste of it, but whenever I bake these banana breads, my entire house smells so good. It's the perfect blend of banana, vanilla, and spice and it makes me feel like I'm in banana bread heaven :)

Vegan Pumpkin Biscuits
Who says that pumpkin season is only during fall? I was so happy when I went to the grocery store and I found pureed pumpkin! Although I will admit that they are a little bit pricey compared to when you buy them during the holiday season, it was so worth it! As you may have noticed, I am a pumpkin lover - pie, ice cream, latte, tea, bread... you name it, I will eat it! My car scent is even pumpkin spice right now (o^ ^o) ♪
As you may have noticed, I love carbs - I can eat it almost everyday (in moderation of course) Especially biscuits...they are so good! One of my favorite kind of biscuits is from Lucille's... if you have not tried it, I would advise you to go and try it! It is absolutely heavenly; however, I know that I need to limit my visits at Lucille's because who knows what's inside their biscuits! It tastes good but if I eat it all the time, there is going to be a lot of cholesterol clogging my arteries. That's when I came across this site, that gave me inspiration to bake vegan pumpkin biscuits!
I used the recipe from Opera Singer in the Kitchen's Fluffy Vegan Pumpkin Biscuits with some little changes in the recipe (:

Birthday-Themed Chocolate Rolls
I am just in love with any type of rolls - cinnamon rolls, cheesey garlic rolls, sweet rolls, pizza rolls, you name it and I will eat it! For this particular one, the reason why I picked chocolate rolls is because my coworker gave me some Easter Rabbit chocolate (you know what I'm talking about, it's one of those big huge chunk of chocolate that's shaped like a rabbit!) Since I wasn't in a mood to eat the whole rabbit, I wanted to utilize the deliciously cute chocolate rabbit where I can share it with others without being super messy. Then, I thought...if I crush the chocolate, it would be a perfect filling for my rolls! The reason behind the rainbow sprinkles is because #1, sprinkles make your life filled with joy - I mean, look at how cute and happy it looks? I know that it's a clump of sugar and artificial food coloring, but sometimes, it's ok to like the "not so good for you" foods (: #2, it was one of my coworker's birthday and I wanted to make him something festive (o^^o)
Did I also mention that there's no yeast? NO YEAST - there, I said it. But it still creates that soft bread-like texture which I love about this recipe. Sometimes, when I use yeast, I have to wait for it to rise, and sometimes, I just don't have the patience to do that. So this is an easy go-to recipe if you are in a hurry and need to whip out something quick (:

Coconut Banana Bread
The reason behind this recipe can simply be described with one word: Leftovers. There was a time where I used coconut flakes for another baking project and I ended up with so many leftover coconut flakes. Since my family is not a big coconut fan, I never really used coconuts for my baking. As I was browsing inside the fridge, I saw two bags of coconut flakes so I thought...maybe it's time to use it before I spoil them... It's really funny what you come up with when you're trying to clean up around your fridge! It's a win-win situation because 1) you get a delicious treat and 2) you can prevent yourself from spoiling food!
I never really thought of a combination of bananas and coconuts but then again, they are both in the tropical fruit group so I guess it works out!
