Pull-Apart Vegan Cinnamon Rolls

Who loves Huffington Post?? I do! I would say it's my go-to website (along with my other one: Buzzfeed!) So basically I came across this article called "16 Recipes You've Got To Try For Pull-Apart Bread" and it gave me an idea of wanting to bake pull-apart cinnamon rolls. I've been baking these vegan cinnamon rolls for about 3 years or so - but I didn't even think about making it a pull-apart! It's very simple. All you need to do is to change the thickness of the cinnamon rolls and that's it. In this case, you slice it very thin.

Vegan Chocolate Chip Cinnamon Rolls

I'm not going to lie... I get a little lazy girl when I bake - it's very hard to really dedicate my entire life to baking when I have a non-baking career, when I volunteer, and spending time with family and friends. (Does that sound familiar to anyone?) But, I don't necessarily think it's a bad thing that we're busy. I think it's ok to have limited time and still manage to do something you love. In my case, baking! Sometimes, I wish that I can just twirl my magic wand and bake at an instant! (Really, I wish!) But in reality, I know I can't - that's why I find this recipe helpful when I'm busy!

I've always loved cinnamon rolls - I remember going to the mall or the outlet and going to Cinnabon but, did you know that ONE classic Cinnabon contains 880 calories?? I'm not surprised, but still, if my caloric intake is 1200-1500 calories per day, that's more than half of my daily caloric intake... what else am I suppose to eat after I eat ONE Cinnabon? Although I am a true believers of not completely eliminating specific type of food, if I can bake something similar to the commercialized desserts with more than half of the calories and preservatives, that is just an ideal dream of mine!

The reason behind my vegan cinnamon rolls is because, most cinnamon roll recipes have yeast, which not only takes time to let it rise, but also yeast is not "vegan". I wanted to see if I can make cinnamon rolls while still cutting back on the calories, dairy (I'm slightly lactose intolerant), and cutting back on time.

Birthday-Themed Chocolate Rolls

I am just in love with any type of rolls - cinnamon rolls, cheesey garlic rolls, sweet rolls, pizza rolls, you name it and I will eat it! For this particular one, the reason why I picked chocolate rolls is because my coworker gave me some Easter Rabbit chocolate (you know what I'm talking about, it's one of those big huge chunk of chocolate that's shaped like a rabbit!) Since I wasn't in a mood to eat the whole rabbit, I wanted to utilize the deliciously cute chocolate rabbit where I can share it with others without being super messy. Then, I thought...if I crush the chocolate, it would be a perfect filling for my rolls! The reason behind the rainbow sprinkles is because #1, sprinkles make your life filled with joy - I mean, look at how cute and happy it looks? I know that it's a clump of sugar and artificial food coloring, but sometimes, it's ok to like the "not so good for you" foods (:  #2, it was one of my coworker's birthday and I wanted to make him something festive (o^^o)

Did I also mention that there's no yeast? NO YEAST - there, I said it. But it still creates that soft bread-like texture which I love about this recipe. Sometimes, when I use yeast, I have to wait for it to rise, and sometimes, I just don't have the patience to do that. So this is an easy go-to recipe if you are in a hurry and need to whip out something quick (:
