Crunchy Chocolate Chip Cookies

Have you heard of a children's book called If You Give a Mouse a Cookie by Laura Numeroff? Apparently we got that book (which came with a recipe book) from Scholastic when I was in elementary school. In case you need a refresher, Scholastic delivers books, magazines, and educational programs directly to school and the parents (with their children) can purchase them! Brings back good memories huh? o((*^▽^*))o It was so random that we found that and it has been so long!

Also, since this is a children's book, I noticed that many of the recipes in this cook book is very simple. There's no need for preservatives, artificial colors, natural flavors, etc. I like it when the ingredients are very simple and it shows the true meaning of "natural".
Of course, this is NBB so I did make some minor changes and yes, I mentioned it in bold so that you will all recognize it immediately (;



Servings: 9 regular cookies and 15 mini cookies. Total of 24 cookies.

Ingredients:
  • 1 1/4 cups flour 
  • 1/2 teaspoon baking soda 
  • 1/2 teaspoon salt 
  • 1/2 cup vegetable oil (my replacement) 
  • 1/2 cup sugar 
  • 1 teaspoon vanilla extract 
  • 1 egg 
  • 2 cups rice kirspies cereal 
  • 1/2 cup semi-sweet chocolate chip 
Instructions: 
  • Preheat the oven at 350 Fahrenheit. 
  • In a medium bowl, combine flour, baking soda, and salt. 
  • In a large bowl, combine vegetable oil, sugar, and vanilla until well mixed and smooth. 
  • Add the egg and mix well. 
  • Mix in the flour mixture in 2 increments. 
  • Stir in the rice krispies and chocolate chips 
  • Bake for about 20 minutes or until the bottom of the cookies are golden brown.

At first, I was a little worried that these won't turn as crunchy as the normal recipe because I did switch the ingredients a little but they tasted the same. They were crunchy just like the original recipe so my thought is... if it's going to taste the same, why not just make it with some alternatives? By just switching the ingredients, I just was able to avoid unnecessary amount of saturated fat and cholesterol. Hurray! 

But a last thought: I would highly recommend either to find or buy the recipe book! They are all cookies, but they have some good recipes!
