Chewy Double Chocolate Chip Cookies

As you can tell, I love desserts - I'm a complete sweet tooth; which is why I need to be extra careful what I eat because if it's something sweet, I can easily eat an entire batch! Going back to the topic of cookies, but when it comes to cookies, I LOVE chewy cookies; however, most of the chewy cookies contains a lot of butter. Although I am not against butter (they certainly are flavorful) but whenever I eat something that contains high amount of butter, my throat starts to itch, which is an uncomfortable feeling. Therefore, I was very very excited when I figured out a recipe that can make chewy cookies without using butter! It was quite an exciting discovery for me :)



Chewy Double Chocolate Chip Cookies 
Servings: 18 cookies

Ingredients:
  • 1 cup all-purpose flour
  • 1/3 unsweetened cocoa powder
  • 1/4 teaspoon salt 
  • 1/2 teaspoon baking soda 
  • 1/2 cup vegetable oil 
  • 1/2 cup sugar (or brown sugar) 
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

**In order to make it completely "dairy-free", please use dairy-free chocolate chips! 


Instructions: 
  • Preheat oven at 350 Fahrenheit. 
  • In a medium bowl, whisk the flour, cocoa powder, salt, and baking soda. 
  • In a large bowl, combine the vegetable oil, sugar, egg, and vanilla extract. Mix well until smooth. 
  • Add the flour mixture into the wet mixture using a rubber spatula. 
  • Lastly, fold in the chocolate chips. 
  • Take about one Tablespoon of dough and flatten the dough on the baking sheet. 
  • Bake for about 10 minutes. 
  • Cool, and enjoy!

Chewy chocolatey gooey-deliciousness!

This cookie reminds me a little bit of a brownie but in a cookie-form. I must warn you that you can easily eat the entire batch in one sitting; however, I don't recommend doing that just because that's definitely not good for you. Although this is considered "healthier" than other commercialized cookies, eating an entire batch is not a healthy option at all and I don't recommend it. But, I must say, these cookies are superb. It goes quite well with black coffee (which I love) and if you're not a coffee drinker, it definitely goes well with a cup of tea as well ;) 

The key to this chocolatey gooey-deliciousness is that I'm not too shy about using cocoa powder. I like my double chocolate chip cookies to taste extra chocolatey! This recipe is also my "go-to" cookies because when i'm in a rush, I can easily bake them in less than an hour (yes, you heard me, less than an hour!!) It typically takes me about 45 minutes (minus the dish washing of course, but I can always wash my dishes later in the night ;D)

    1. I'm pretty sure cups since its only logical compared to the other constituents of the recipe.
