Today's blog post is a vegan double trouble fun! When I think of scones, I imagine myself sitting at an outside garden area by the patio, drinking coffee while reading a book as I eat my delicious scones. Not only that but I like my scones soft, yet crunchy on the outside. These scones are EXACTLY like what I just described. The inside is so soft and fluffy. In fact, this is one of my favorite vegan recipes! The reason why I decided to post both of these recipes is because these recipes are pretty much identical. The only difference is that one has raisins vs. chocolate chips. One has brandy inside, one does not. I think it's amazing how I can change a small part of a recipe and something different can be created! Even though the type of food is the same, it's definitely not an identical.




Vegan Matcha Scones with Chocolate Chips 
Servings: 12 scones

Ingredients:
  • 3 1/3 cups all-purpose flour 
  • 2/3 cups matcha green tea powder 
  • 1 Tablespoon baking powder 
  • 1/2 cup light brown sugar 
  • 4 Tablespoons vegetable oil 
  • 1/2 cup vegan chocolate chips 
  • 1 1/4 cups almond milk 
  • 2 teaspoons vanilla extract 

Instructions: 
  • Preheat oven to 400°F
  • In a large bowl, mix all dry ingredients: flour, baking powder, and light brown sugar. 
  • Stir in the vegetable oil into the dry ingredients then add the raisins. 
  • In a medium bowl, mix the almond milk, vanilla extract and brandy and stir well. 
  • Add the wet ingredients into the dry ingredients in about 2-3 increments. 
  • Mix well - I advise to use your hands to kind of knead it and not mix it. 
  • In a floured chopping make a square and cut the batter 
  • Sprinkle a little bit of the brown sugar 
  • Bake for about 20 minutes 


Vegan Raisin Scones with Brandy 
Servings: 12 scones

Ingredients:

  • 1 cup raisins 
  • 1 1/4 cups almond milk 
  • 2 teaspoons vanilla extract 
  • 1/4 teaspoon brandy

Many people don't believe me when I say that these scones are vegan! I think many people around me assume that vegan baking doesn't taste good. But, I want to break that lie and show everyone that vegan baking can be delicious :) I assure you, that this recipe is a lot healthier than other processed vegan baking that you see at grocery stores ;) I hope you find this recipe "sweet" as much as I think it is!
